How about the Sweet Dreams Throw as a joint knitting project?
Okay, it's obviously done in more than 3 panels, but still simple enough. The instructions are on the knitpicks site. I'd want to use fern green, jade, and sandstone.

I game for making it except I don't know how much I'm gonna love weaving in all those ends!
Um, yeah. And while it looks pretty simple, the other side of that coin may be that it's pretty boring.
I think that most blankets are kinda boring except for the really involved ones with a special color pattern or cables or something. I don't think that a more involved pattern would work for a collaboration--too many ways to screw it up between us.
The Sweet Dreams pattern should be pretty suitable since it has the color changes to keep us awake but there's not too much room for error.
